Bean to Bar with Booze!


The combination of chocolate and spirits is a favourite of ours, as we have done many Chocolate Pairing events with wine, scotch and beer.  We believe these flavours are meant to be enjoyed together and so we are happy to see many chocolate makers introducing flavour bars that combine both in a bar. 

Dick Taylor Bourbon Whiskey 70% Dark 
This limited edition bar is the 4th creation in the Barrel Aged Chocolate line by Dick Taylor. Using fine flavour cacao from Brazil, this bar begins with the aging oc cacao nibs in Alchemy Distillery's Straight Bourbon Whisky barrels. Once fully aged, these nibs are used to create a 70% dark chocolate bar, adding only cane sugar and cacao butter. The result is an amazing robust and complex bar with pronounced oak and bourbon flavours. 57g bar

Kasama Single Malt Canadian Whisky 70% Dark
Our friends at Kasama, in Vancouver, have created this special release bar in collaboration with Odd Society Distillery. Roasted Costa Esmeraldas cocoa beans cracked into nibs are aged for 4 weeks in an oak cask of Odd Society's Commodore single malt whisky. The barrel is turned twice a day to make sure things are well mixed. The nibs are then dried and ground to make this deliciously rich dark chocolate with oak and whisky notes. 55g bar

Kasama Wallflower Gin & Juniper 70% Dark
A second special release bar by Kasama! For this one, they used cocoa beans from Papua New Guinea with a unique aroma profile, and aged them for 4 weeks in an oak cask with Odd Society's Wallflower Gin. After the aging process was finished, they stone ground the beans with juniper berries. While this chocolate melts on your tongue and the aroma and flavours unfold you will enjoy an elegant floral bouquet with aromas of fresh cut evergreens and hints of orange blossom. 55g bar

Raaka Bourbon Cask Aged Unroasted 82% Dark
Made with cask-aged Tanzanian cacao, this is a deeply nuanced bar with a cocktail-like vibe: oaky and smooth, with a hint of cherry cordial. 55g bar

Soma Brown Butter Rum Bar
When butter is warmed gently over low heat it bubbles and browns to a rich, toasty, nutty substance known as Beurre Noisette. The process takes butter down a dark path, a path well traveled by chocolate and rum. This deeply complex and flavourful trio mingle effortlessly. The cocoa is named Vanua, grown in Fiji. The rum is "Dark Waters" from Kinsip, a small distillery in Prince Edward County. Tasting notes of cashew, butterscotch, honey, oak and fudge. 65g bar

McGuire Bourbon Dark Chocolate 75% 
A pilot project with a short production run, so grab it while it's here! Kokoa Kamili cacao beans are soaked in Bulliet Bourbon from Kentucky. The bourbon has flavour notes of vanilla, apple, sweet spice and smoky oak. You're going to love this flavourful bar! 50g bar

CÓCÓ Beer Bar 60% Dark Milk Chocolate
CÓCÓ has partnered with MacKinnon Brothers Brewing Company to create this unique bar. A farm based brewery, the MacKinnons have renovated barns and planted hops and malted barley to their 200 year old family farm in Bath, Ontario. From there they produce a beer that has the unique character of rural Canada.  CÓCÓ uses their hops and malt in this dark milk bar with notes of caramel...and beer of course! 45g bar

Zotter Tequila 60% Dark Milk Chocolate
"Handscooped" bars are Zotter's claim to fame, with layers of filling piled up and covered with chocolate couverture for an incredible taste experience. Tequila in a milk chocolate ganache, lying on a lemon ganache covered in dark chocolate sprinkled lightly with salt.   70g bar

Zotter Marc de Champagne + Raspberries
"Handscooped" and a combination of dark and milk chocolate ganache is enhanced with the champagne distillate from Fleury. In addition a layer of raspberry ganache made with so much raspberry, the berry flavour and pink colour shine through. 70g bar

Zotter Gin Zitronic 60% Dark Milk Chocolate
"Handscooped", this dark milk chocolate bar is filled with ginganach and lemon cream. Hands On Gin by Gölles is made with white rum, juniper, black currants, lemongrass, coriander and some orange peel, all of which flow perfectly into the dark chocolate. Combined with a tart lemon ganache made with milk chocolate, lemons and dry vermouth. The fillings are then covered in a 60% dark milk chocolate. Flavourful and refreshing! 70g bar
