We truly admire those chocolate makers who step outside of the lines. Creating unexpected bars with unexpected ingredients. This collection is that. And all made by Canadian chocolate makers using their talent and ability to add to the chocolate in just the right amount.
Palette de Bine’s Sapin bar has a base of Wild Bolivia 70% cocoa. This is very special cacao; wild, rain forest chocolate harvested from natural forests in the Amazon. The ﬂavour is bold, fruity and sweet. So that’s the starter; ﬁne ﬂavour heirloom beans. Then an ingredient natural to the area of Mont Tremblant, where Palette is located, is added. In small amounts. Just the right balance - very crucial. Young balsam ﬁr needles are picked from the trees, ground into powder and infused into the chocolate. This bar is subtle - the pine notes are there, but just enough to make the ﬂavour of the bar intriguing.
Desbarres Zafara bar is a 72% Guatemalan bar. This cocoa has sweet notes of caramel and light fruits. Desbarres combined Canadian grown True Saffron to this bar and the ﬂavour is almost indescribable. How do you describe saffron? It’s distinct. It’s sweet. It’s savoury. And when combined with chocolate it is one of the most interesting bars at JoJo CoCo.
Sirene has used his award winning Dark Milk bar, with it’s base of Guatemalan cocoa, to create the bar he calls Ch’Abil. The idea to combine cardamom with chocolate came to Sirene when it was realized that he could get both ingredients from the same region. The cardamom is obvious as soon as the bar is unwrapped. It’s a dominant ﬂavour with the chocolate but not overpowering. The balance is perfect.
It isn’t about the addition of ingredients that makes ChocoSol’s Jaguar Pure a unique bar. It’s the cacao itself that does it. This bar is a 75% Albino Cacao bar. Albino beans are white in colour, thus the name. The beans are found in central and south America and are call Jaguar beans, among other names. Described by ChocoSol they are “rich, nutty and entirely unique” in ﬂavour. Award winning and decadent, this bar should not be missed!
